Lemon Christmas Cookies

1 cup plain flour
3/4 cup cornflour
1 tbsp cornflour
1 tsp baking powder
1/4 tsp salt
125g unsalted butter
1/2 cup caster sugar
1 tsp caster sugar
2 large egg yolks
5 tsp finely grated lemon zest
2 tbsp fresh lemon juice
1 tsp vanilla extract
1 3/4 cups icing sugar
Shelled pistachios and cranberries to garnish
Whisk plain flour, cornflour, baking powder and salt in a medium bowl.
Using an electric beater, mix the butter and caster sugar on medium-high speed until pale and fluffy. Mix in yolks, lemon zest and vanilla. Reduce speed to low and gradually mix in the flour mixture.
Shape mixture into a disk and wrap in cling wrap. Refrigerate for about an hour or until firm.
Preheat oven to 180°C. Place the dough on a clean, lightly floured work surface and roll out to about 1/2cm thickness. It will be quite crumbly so you will need to work the mixture until it warms up. Cut into shapes using your favourite cookie cutter. Place on baking trays lined with baking paper, leaving some space between cookies. Refrigerate again until firm, about 15 minutes. Bake until golden, about 12 minutes. Allow to cool completely on a wire rack.
Stir together the icing sugar and lemon juice. Using a knife, spread icing on to biscuits and sprinkle with pistachios and cranberries. Allow the icing to set before storing in an airtight container for up to 1 week.
