Mac n’ Cheese with a lil’ extra thrown in

Mac n’ Cheese is just one of those meals that is delicious every time. Unless you’re my cousin who once put the packet mix in the microwave but forgot to add the water. That mistake ruined his day.

This Mac n’ Cheese has a few veggies thrown in but feel free to add your favourites in to mix it up. I think next time I make this I’ll put some sweet potato in to really spice things up.

Pea and Broccoli Mac n’ Cheese

Ingredients

500g packet macaroni pasta

375ml evaporated milk

1 tbsp cornflour

1 cup frozen peas

2 cups frozen broccoli

Handful shredded cheese

Method

Cook the pasta according to packet instructions, drain and set aside.

Steam the broccoli in the microwave for about 3 minutes, or until soft. Drain and roughly chop into small pieces. Set aside.

Put the cornflour in a small jug and add a dash of evaporated milk. Mix with a fork until well combined. Pour the rest of the evaporated milk into a fry pan over low-medium heat. When starting to simmer, add the cornflour mix and stir until the liquid starts to thicken. Add the broccoli, peas and cheese. Stir until the cheese melts. Season with salt and pepper. Add the pasta and stir to combine.

Serve as is, or place into a baking dish and top with additional shredded cheese before baking at 180C until the cheese browns.
