If I had to pick my all time favourite food, the one I’d choose if I was to live out the rest of my days on a deserted island, it would have to be noodles.
When it comes to take away I’m always in the mood for Thai or Vietnamese noodles. Without fail. They’re great hot and they’re great cold. When I’m hungover I crave two minute noodles (Oriental flavour.) Noodles are so versatile and I just can’t get enough of them! A Vietnamese restaurant has recently opened up just below my apartment which has made it easier than ever to get noodles on demand. I’m making friends with the girls who work there but it’s also coming at a large cost.
Now that Summer has well and truly arrived I’m eating salads nearly every night for dinner (and loving the leftovers for lunch the next day.) This delicious noodle bowl is delicious and fresh and super easy to make at home. It has already prevented me from ducking downstairs to the Vietnamese restaurant a few times already. I’m sure they miss me but a girls gotta save some money!
This noodle bowl is vegetarian, but feel free to add in your protein of choice.
Lime to serve
3 cloves of garlic
1 1/2 tbs Apple Cider Vinegar
1/4 cup brown sugar
1/2 cup lime juice
1/4 cup fish sauce
1/3 cup olive oil
Combine the dressing ingredients in a blender or food processor.
Cook rice noodles in hot water according to package instructions.
Peel or julienne cut the vegetables.
Layer noodles and vegetables in a bowl. Top with chopped Mint and Coriander, chilli, peanuts and dressing. Add an extra squeeze of lime juice over the top.
Enjoy (over and over again!)
